Most people know Pimente de Padron. Small green peppers fried in oil with salt, this is a Spanish classic. Some of the fruits can be surprisingly strong, like about 1 in 10. Padron, like most other chillies, changes color when they ripen. It takes a long time from the time they are ready to eat until they change colour. As red, they are quite a bit sweeter and are recommended to be fried green!
